Apple wood gives a slightly sweet, fruity smoke flavor that is great for poultry, game birds and pork. To achieve optimal flavor, soak the apple wood chunks in cool clean water for about 30 minutes. Without soaking they will burn quicker and provide slightly less flavor. Soaking for 30 minutes allows the outside of the chunks enough moisture to present the controlled burn to properly smoke.
